If you havent been to Carcasonne then you have to go and (IMO) you then dont have to return. From what I remember it may be a hard day for you on the cobbled tight streets heaving with tourists. Great from the outside.
For Sarlat you may want to consider Grolejac. Its about 11kms into Sarlat on a very smooth voie verte crossing the Dordogne. https://www.motorhomefun.co.uk/forum/journals/grolejac-to-sarlat.138/ I m unsure of your range though
Mirepoix is very nice. https://www.motorhomefun.co.uk/forum/journals/grolejac-to-sarlat.138/ with a flat short stroll into very nice town (and voie verte but a tad boring to start with)
