It's not deep fried but slow cooked for a very long time. They bring it out on the platter and it's so tender they serve by parting the meat with two plates, no knives involved. When we were there the owner/chef proudly paraded round the restaurant wearing the chains and medals he had been awarded for the suckling pig.

Did the Chef once part a stretch of water with two plates? oh, and did you get bread with your fish.....bet the restaurant was full
