Simple food for simple/single blokes

Some very good quick and easy meals here, but am I the only one who noticed how few of them contain vegetables of any kind?
Really, a piece of chicken/salmon/beef etc grilled or dry fried sprinkled with some of those few seasonings you’ve got, and some carrots, broccoli and potatoes steamed, lovely and easy, and healthy!
Or at least add some frozen peas to one of the recipes...
 
My wife hates cooking and shopping so I do all the cooking and the shopping, as I enjoy cooking and I buy the food that I want. We are off in the camper this afternoon for example and when we arrive at the site, meeting our mates, she will have absolutely no idea what is in the fridge, just assuming that the fridge and the freezer will be suitably stocked for all eventualities and numbers.

We have a slide out beer/wine chiller and, equally Lyn will just assume that what ever wine takes her fancy will be there lol But, as I type this Lyn is at home decorating the hall, stairs and landings a job I hate and can't be arsed to do.

Simple recipe? Serves two, or if your Billy No Mates, makes a great dinner for one, with an amazing lunch ready for you the next day!

Buy some Porky Whites premium pork sausages, and put them in a pot, If you want to get all "Cheffy" cut each sausage into three (would recommend even on the basic cook that you cut the bit that joins the sausages)

Get two large Onions peel them and quarter them, chuck em in the pot.

Buy two jars, one of lazy Chilli and one of lazy Garlic. Open the jars. Put two heaped teaspoons (the spoon you use to make tea or coffee) of Lazy Garlic in the pot. Put one heaped teaspoon (the same one will do) of Lazy Chilli

Open a can of chopped tomatoes and empty it into the pot

Open a can of Plum tomatoes and empty it into the pot

Half fill one empty can with hot water and swill the water around until all the red stuff has dissolved, and pour it into the other can and swill until the red stuff has dissolved, pour the water into the pot.

When you bought the Lazy Garlic and Chilli hopefully you saw something called Paprika, and you bought a jar of the smoked sweet kind as you need two heaped teaspoons (covered already) sprinkled over the contents of the pot.

Add a big knob of butter, about a quarter of a normal sized block

Add a glug of Olive Oil about an egg cup full

Add Pepper, crushed black better, but what ever you can find at the back of the cupboard will do, add about two teaspoons

Stir well, carefully not to bash up the tomatoes.

Cover with a lid, or foil (don't use Cling film) and place in an oven at 160 degrees, (Gas Mark Google) for at least 80 minutes, but within reason another hour or so won't really matter whilst you wine and dine your guest and regale him or her with your cooking prowess.

Serve with shop bought Baguettes ripped into chunks with Red wine!

Time to prepare? Five minutes allowing for pouring the Chef a Large glass of Red wine as a reward!

That sounds nice! I would add a tin of baked beans to make it into a cassoulet. :)

Try a student cook book or a 3 or 4 ingredient cook book or even Mr Oliver's 5 ingredient cook book :)

The place named after the Big River is your friend or even The Works (go through Top Cash Back for cash back at The Works - plus they have an on-line sale at the moment).

I was even going to mention the F word—— Fruit. I’m off to make breakfast, an apple, kale and blueberry smoothie. Might go wild and lob in some chia seeds :)

My favourite quick meal in the motorhome is to fry up an onion and some mushrooms, add a tin of new potatoes, a tin of baked beans and slices of chorizo sausage.
I'm drooling thinking of it..
Edit ; credit should go to someone on here who suggested it with corned beef, can't remember who it was. I just substituted the beef for chorizo.
 
If the OP wants to learn some basic skills & cooker some proper food... with out having to eat it four nights on the trot & have a cupboard full of ingredients used only once...

I'll suggest finding a copy of;

Corned beef hash is a favourite for us when in the van.
1x can corned beef
1x can potatoes
1x can baked beans.
1x large frying pan or oven.

Drain and dry the potatoes and cut up into slices or small chunks. Dry with kitchen towel as much as you can to stop them spitting in the pan.
Drop of oil in pan and fry until light brown.
Chop beef into chunks and add to pan until light brown.
Add beans and heat through.

Scoff and enjoy.

PS. Can also be done in the oven if preferred. The chunks of corned beef get nicely crispy on the outside if you prefer it that way.

Thanks for all the replies....shopping list now includes corned beef, mushrooms, creme fresh, potatoes.....more mushy peas
and a deep fat fryer:)

Get an "air fryer " instead of a deep fat fryer, you still get all the pleasure and decadence of chips and fried food but without the health hazards but you do need ehu

Lovely chips can be made with an Air Fryer. Great gadget for heating pies too, @JJ, but not tinned ones!

I have had that book for probably nearly 30 years..

It has been thrown across the kitchen more than once when being a single mom was anything but fun!!!

As a teenager me and my mate survived a week's camping on cornflakes and milk for our main meal. For dessert we had cornflakes and milk (with a spoonful of jam on it )! :)
 
I too discovered the versatility of cornflakes as a teenager : crush them up,stir into beaten egg, pack into small billy can base and place over moderate heat, guestimate doneness,upturn into frying pan and cook other side til golden.
Turn onto serving plate,butter. Eat with poached eggs, bacon, baked beans or use as carrier for marmite, marmalade, golden syrup or honey A truly versatile and nutritious food stuff. (y)

Because of your wretched post (see above) I researched "Air Fryers" and have just ordered one from Amazon...

all cooking is based on burning stuff
to the right level

too much heat burnt outside
raw in the middle

less heat better cooked grub
but takes longer

when boiling veg tables dont let em boil dry

rolls & sandwiches dont need cooking

I wish I'd read this 30 years ago, that's how long it took Mrs Wee Bold Davy to become a head chef, could have reached those dizzy heights in 30 days, not to mention the £thousands we spent on books. You should be on the telly, absolute genius;)
 
There I am having driven 576kms & it's all I can do to boil a kettle & slice some cheese.:sleep:
@JJ We have a Tefal actifry & yes it cooks them with a teaspoon of oil but they won't look & taste like the photo of yours from the fryer:(
