Marinating in olive oil will not make the meat tender.

You rest the meat to allow the juices to remain in the meat, you don't want them coming out until it is in your mouth.

We finally made it to Spain a sh*t day rained all day finally stopped about 20 miles into Spain.
We were going to take one of the Cols over the top for a seinic drive but because of the weather gave it a miss and went through the Bielsa tunnel.

Now at a free Auto Camper stop near El Grado.

Joint effort on the cooking tonight I did the hard bit the frozen Cordon Bleu's in the air fryer, while the boss did the veg including a fresh beetroot.

I had a difficult day today, Greek salad , tzatziki , and Mussels plus Baklava, but Lynda had swordfish and the portion was huge so I had to eat half of that as well
