I've got a pattern for socks using that technique. Not been brave enough to try it as it seems quite tricky to make sure the right stitch is knitted in the right colour. I'm far too easily distracted to concentrate on making themI've done no craft work at all since being in hospital in April / May.
However I have seen an interesting Scandavian technique of "double knitting". Nothing to do with the weight / thickness of the yarn but a technique where a reversible item is made. Difficult to explain but a lined item is made by knitting inside and outside at the same time. I think probably best to use 3 or 4 ply yarn or it would be too heavy.
