Might not be your end - depending on the streaming source, it could be their servers don't have the capacity to service all their consumers at periods of high demand, it could be your VPN servers suffering the same problem.
I have a 1gb full fibre to the house and it's surprising when I do a speed check, the results depend on what server "Speedtest" chooses to connect to.

Are you connecting via VPN Howard H?

That would be the prime suspect!

If not then it could just be that you're in an area with lots of other devices connecting to the same masts.

In either (or both) scenarios I would expect a degradation of service during peak times.

Download WiFi Analyzer or similar to your phone and check to see no-one around is competing for the same WiFi channel. Change it on the WiFi if need be. It probably defaults to a fixed channel. From there, it's then the mast you are connecting to and your links to it. Video knocks takes huge capacity. The local provider may be restricting the downstream data speed.

No, not really. But that would add a level of potential slow down.

Say you wanted to watch Eastenders 🤪.
BBC server -> VPN Server -> Vodafone.pt server -> Your device

But as Fishplug mentioned mast congestion can play a part

WiFi is a dark art
