So just how much water do I have?

Probably more robust, but you wouldn't choose to travel with a full cassette if at all possible. And the float may only in the upper region.
(- TBH, it's not something I've been curious enough to investigate !-)
 
I cleaned out my tank a couple of days ago and took the opportunity to measure the levels when refilling. I have a 4 green, 2 orange, 2 red scale. It drops to 2 green after only 15L and to 2 Orange after a further 15L. It remains at that until it is down to the last 30L when it switches to 2 Red. Down to 20L and the water tank button flashes. Happiness is a full tank.
 
Don't be fooled by the number of bars.
On some displays they light in pairs so that, rather than eight levels of indication, you only have four.
My pump comes and stays on to tell me when I'm empty
(- useful to have an audible warning rather than a barely visible flashing light !-)
 
I've also found that when the gage says 100% I can still add quite a bit more before it overflows. Not sure how much more but I'm going to try and find out.
 
When I converted our ambulance I put an inboard water tank under one of the seats but it didn't have a level gauge so I invented my own ... a long piece of dowelling with marks on it so when I wanted to see what we'd got left I stuck in through a small hole I'd drilled in the top - the hole then had a bung placed in it afterwards - I didn't leave the stick in otherwise whilst travelling it would be completely soaked so inaccurate!

Hence the saying "You dipstick, Roddy."
 
This could be SOO easy to do, vehicle fuel tanks have had reasonably accurate measuring kit in them since at least the mid 50's, so 70 years worth of RUDIMENTARY technology (Floats n rheostats n a very simple gauge...), you're not trying to tell me that a water or grey waste tank is likely to have different fluid carrying characteristics than a fuel tank...... are you? Come on you Mo Ho builder Johnnies get this sorted out!! And no excuses about the ineptitude of MoHoers when it comes to getting their vehicle level, stick the mechanism slap bang centre of the tank and you'll still get an accurate reading on the side of an Alp!!
