I’ve a 100w solar panel which is 12m from the Victron MPPT 75/10 controller to the battery in my shed - can I use standard 2.5mm cable over that distance ?

For 12m run, 2.5mm2 cable it will be safe as it will only carry 6.2A at 100w load but, the drop will be 7%, with 6mm2 cable same distance and same power, the drop it will be 3%. And this is at 18v from panel to regulator.

As Raul says 6 m sq would be much better but if it's only for a battery powering lighting in your shed if may not be too much of a problem
In summer when you have plenty of sun and long days a 7% loss (0.42 amp) may not worry you too much and in winter the panel will only be producing say 2 amps the loss will only be 0.12 amp so not enough to worry about.

I’d also consider a 2nd panel in series, higher voltage.
