Mrs. TM Has started bread making again.

can’t seem to source good flour.
Recently listened to Jeremy Vine show about how the nutrients are removed during the milking process.

so, any recommendations on source of good flour welcome please ?
 
I go to our local bakers... Thomas’s of York...
They sell all flours and yeast.
Try you local bakers, you might be lucky.
 
Sharpham park spelt flour, if you find yeast online let us know!
 
Go to Lisa’s Bakery on EBay, she has some great flours and mixes
 
Another Vote for Shipton Mill. Get stoneground organic. Spelt is also a lovely flour but you won't get so much rise as it has less gluten.

Wholemeal has less gluten as well, Marriges also Mill Strong Canadian white flour along with spelt and other speciality flour and yes stone ground as well. The stones are hand maintained so are they better than Shipton.....who knows probably best to buy quality flour from your local miller and save on carbon miles where possible.

If Mrs TM is going to do a lot of bread making it might be worth buying a big bag of flour. I've ordered a 16kg bag of Nelstrops Empress Queen flour from a seller on Amazon for £16.99 delivered.
Nelstrops are based in Stockport & have been milling for 200 years

That's interesting a bag from Marriges is about the same plus postage, the BBC link they talk about roller milling which helps to make the flour cheaper I wonder if that's the difference between some of the providers, I am not saying the quality of nelstrops is not good as, if that was the case they wouldn't be in business they do say on thier website
"A combination of traditional millingtechniques with state of the art milling technology" where as Marriges and Shipton are Stone ground.

Thank you to all who suggested Shipton Mill - couldn't get a slot to buy smaller bags from their Flour Direct shop (have tried at different times over several weeks) but could buy a couple of big sacks from their Sack Shop (y) Know this delivery may not be speedy but have given up on trying to get organic bread flour from Ocado as have had some flour substituted over the last couple of months & whilst glad to get anything delivered it was never what we wanted so treating ourselves with an order from Shipton. If this works out it may change how we buy flour for good even after lockdown.
 
Struggling to get flour from Marriages lately but just bought 16kg bags of Marriages wholemeal and self raising through Amazon.
 
I went to lidl yesterday and they had organice bread flour on the shelf , thought of this thread... :unsure:

UPDATE - Shipton Mill website now open for business as usual so no waiting for delivery slots - it would change just as our two big sacks have been delivered! Would have preferred a variety of smaller bags & been able to add dried yeast (if in stock) but at least we have plenty of bread flour to share now :)
Found out that fresh yeast freezes well so when we have managed to get some have split it & squidged into little 7g blocks (equivalent 1 tsp dried yeast) & frozen in a tub ready to use - adding frozen to the breadmaker when on timer overnight works well so not essential to defrost.

Thought you needed to use double the amount of fresh yeast to dried. That's what I used to do.

Mr Wombles works to the Panasonic bread machine recipe book & having checked that it says 8g fresh yeast (he's being frugal with 7g as yeast is scarce) or 1 teaspoon dried yeast which weighs just under 4g. That fits with using double amount if fresh yeast.

Thanks ordered 2kg of Organic Light Malthouse Flour which they say is the equivalent of Hovis granary, if it is I will order a larger amount.

We ordered that too - but had to be huge bag then so do hope it's good as we will be eating it for a long time!
 
Only me and the wife and she doesn't hardly ever eat bread, I usually eat one slice a day so a 16kg bag would last me a year or two. Grandkids refuse to touch it and would rather starve, cotton wool white bread for them.
