I like surprises. When I was still working I used to make up two days' sandwiches at a time and then shuffle them before putting them in the fridge so that I'd not know which ones I'd be taking for my lunch.

I worked with a chap for nearly two years who had lunch every single day of corned beef sandwiches and a mug of OXO and after the first bite would say the same thing:
"Ah, that's as good as roast beef and three veg".
After the first couple of weeks we'd say it regardless of what was in our sandwiches.

That sounds pretty much exactly what we do (except that we only have 2, occasionally 3, weeks) and I think it works quite wellI’ll spend most of the winter happily planning each day for our 6 week trip to Italy next year, then will equally happily abandon those plans if something interesting crops up. Himself will drive, following instructions to turn left or right, and that’s it!

Just in case, I think I will keep the number of different countries we go through to a minimum in case It involves lots of tests. As we prefer the back roads I also want to work out the timing so that the mountain passes will be open, but we’ll be back out of Italy before it gets too hot for me. We also have an Italian trip postponed due to Covid...not for a special celebration like yours though. We'd both negotiated 3 weeks off work and were supposed to be going last May. Of course that was cancelled, and then it wasn't possible this year either. I'm hoping for next year....so long as we can get the leave!
Thank goodness I'm the only one to worry or not worry. Couldn't cope with all that. I get up and go when I feel like it. With smart phones, etc. not much planning in advance needed. Just chill the fridge for wineI have the same sort of problem Mrs pagey worries when she can't think of anything to worry about I on the other hand don't worry about things I can't do anything about
We're exactly the same as you guys, it's taken some getting used to but after the initial stress wears off & I resign myself to not being able to get away with planning anything, then it's rather fun.We have some opposing life view points that may affect our motorhome/campervan lifestyle....
I am a responsive planner. If I have a plan and all the gear necessary, I am happy to deal with what life throws.

Ah but I like the fact that I have everything for 'goes wrong' just in caseif you plan it can go wrong, so don’t plan, it’s then all an experience.
