You could try the site near Florac beside the River Tarn, Camping Chantemerle. You would have to book ahead but the site is next to the river and has pools for bathing - assuming there is enough water in the river in summer.

That time of the year. Sea and Water. ???? There will be some children. We've done the Morvan area of France at that time and its relatively quiet , there are loads of sites on Lake Settons which is very attractive, the water is warm and there are loads of lakeside campsites . We used to stay on Municipal de la baie de la Faye on the edge of the lake. Check it out as it might now have changed to a fancy aire. We have stayed on that site in August and not seen any kids.

Ah yes the Vezere can be a lot quieter….there’s a couple of sights near Limeuil 30 mins from Saint Leon….may be a option.
 
There is a possible solution to your conundrum but you’ll have to be willing to remove all your clothes! Naturist campsites tend to be quieter and more civilised than textiles ones with some great locations. A good guide (in French) is Le Petit Futé Guide du Naturisme or get the Alan Rogers Selected Sites For Naturists guide book.
Beware, once you’ve tried it, you may never want to go back!
HaHa….I once popped into a naturist campsite reception near Caleta de Velez to ask directions to a MH spares place in the area (honest 😥). As I was waiting for the receptionist a man walked in in a short T-Shirt but no trunks…. Nearly put me off Campsites for life ☹️

Ah yes Gorge Du Tarn….overhangs 😥. Had a look and it doesn’t seem to be ACSI any more but still…looks nice and some hiking opportunities as well..but as you say I wonder if there is enough water in August. Trying not to end up somewhere too hot if no immediate access to swimming…God I’m fussy 😊

Just tried one of Mrs. DBK’s recipes from Three Go Adventuring Again…there must be a knack to it…which I don’t have ☹️. Pepper seemed to have lost all its structural integrity…☹️
