That is the first time I have come across “jaggery” in a recipe. I will have to go back to India to buy some from the toddy tappers.Ingredients:
Pork shoulder 250g
Onion diced 140g
Fenugreek Seed 1/2 tsp
Cumin Seed 1/2 tsp
Fennel Seed 1/2 tsp
Mustard Seed 1/2 tsp
Black Onion Seed 1/2 tsp
Crushed Black Pepper 1 tsp
Sea Salt 5g
Gram Masala 8g
Coriander Powder 6g
Turmeric 5g
Kashmiri Chilli Powder 7g
Peanut Butter 60g
Ginger Fresh Fine Dice 30g
Garlic Crushed 30g
Jaggery 80g
Water 200ml
Coconut Milk 200ml
Tamarind Pulp 200ml
Garnish
Crushed Chat Peanuts
Sliced Spring Onion
Toasted Sesame Seeds
Method:
Heat pan, add oil.
Add Bengal 5 spice ( cumin seed, fennel seed, fenugreek seed, black onion seed, mustard seed) cook until spices pop.
Add crushed garlic cook until golden.
Add ginger and diced onion cook until golden.
Add pork cook till coloured.
Add spice powders.
Add peanut butter, tamarind pulp, coconut milk & water. Mix well and cook until pork is tender (pork shoulder needs long slow cook and keep adding water as required to stop sauce catching base of pan)
Eat with plain rice, chapattis or naan and a crunchy onion salad.

I lied in fact I’ve just realised. We’ve actually got 5 french window boxes. I have kitchen envy. We are in dire need of a new kitchen to replace the one we put in when we moved in 25 years ago but we need to knock down a wall to open up the the kitchen and dining room properly. There’s just an arch. We’ve been talking about it now for 5 years, we would pay to get it done but just don’t know where to start as we’re not very imaginative!
That’s a good idea actually. I’d better get tidying and cleaning! The RSJ is in place due to the arch. The dining room has been turned into a mini gym by son home from Uni and the kitchen is quite big but is now stufficated with his things as well (my excuse). Pinterest is new to me but I’m not exactly short of time now. The wall that needs to come out is where the gas cooker is in a run of cupboards. Thank you for the tips!Post some photos on here, I’m sure you’ll get lots of advice.
A builder will advise on the wall coming out and what it will need for support ( RSJ I expect)
Look at Pinterest for lay out and colour ideas. Decide on a style ( ultra modern gloss, Shaker, bright colours or more subtle)
I’d go for the longest worktop run possible, inset sink, and an island if at all possible.
