I noticed a small pool of water under the passenger footwell that looks very much like coolant. I suspect the heater matrix is leaking and I understand I'm going to have to remove a lot of the dashboard to replace it. Does anyone have any experience of this?

I have read of others having gone down this route and it doesn't make for happy reading.
I gather it's a sod of a job and that's putting it politely, but I have no first hand experience so could easily be mistaken, I hope so.
A search may pull up some threads

Ever since lighting was by Calor gas.
I don't know your vehicle so it may not be suitable but when I had a heater matrix leak in the past I have used some leak cure in the cooling system as extensive dismantling (grovelling upside down in the footwell) would've been required to access the matrix.

I don’t know the age of your Hymer but our 2001 fiat based B584, the lower part of the dash is easy to remove, only about 5 screws

Ok, mine’s 2003. Does removing the lower part give access to the heater?
Like you I had a leak in the heater matrix on My 2003 2.8jtd ducato. I bought the replacement matrix & started the process of getting the old one out. After much cursing & two days I gave up. I took out almost the complete dash & still it wouldn’t budge.
After putting it all back, a miracle in itself everything worked. I then bought some kseal from euro parts. Cured! Still good after 4 years.

Thanks, in stock at my local Euro Car Parts. I’ll get some today and try it. If that doesn’t work I’ll go down the removal and cursing route.
