We are going to Spain for six weeks and we plan our menus ( we are keen home cooks ) and one of our signature dishes is chicken livers escabeche style hence the not so strange question.

Just checked out the Hairy Bikers chicken livers escabeche recipe as I didn't know what escabeche was. Sounds delicious. We're going to try it. Thanks for mentioning.

Having thick iberian pork chops tonight.

Liver, yum. Kidneys belong inside steak pies. Seldom see them these days :-(

A chaps workshop isn't complete without several emptied tins to hold nuts 'n bolts when working on the motorbikes.

Iberian pork chops are so delicious that you don't have to do anything special. Just get the butcher to chop them thick, not the thin slivers that they usually do.

Salt, pepper, bit of olive oil in a very hot pan to sear the meat and fat, then into a hot oven for 15 - 20 mins depending on thickness.

They are more expensive than regular pork chops but sooooo worth it.

I used to love Fray Bentos chicken and mushroom pie but for some reason they just stopped making them, proper working class grub that. A pie in a tin, lovely(y):giggle:

CLs cooked with finely chopped onions, garlic, oregano, coriander, salt and pepper and red wine. Served with a crusty bread. Yum!
