On the basis of probably not going to be able to change a wheel myself, I'm thinking I'd end up calling someone out anyway so thinking just carrying a spare tyre. Not ever having to need one, I'm guessing the mobile tyre fitters will all have the right equipment to remove and replace a motorhome tyre?

That seems an incredibly complex and troublesome way of saving a few quid. Not sure about your hourly rate, but the saving you would make compared to the time you would have to wait for the breakdown service to take off your wheel, traipse across country and try to persuade a tyre fitter to fit it for nothing, is negligible. Also, if some friendly person, who can change a wheel (me) stops to help, they are stuffed. You need to get out more 😉

So job done and I can recommend Halmerend who supplied a new wind down carrier, good as new steel wheel and a partially used tyre to match existing all for £160. For most people, this will be a very straightforward job but I encountered a couple of issues as I've got a tow bar fitted, so thought worth sharing the following.

The 1st one was that one of the brackets holding the winding mechanism to the chassis was fouling one of the plates added for the chassis extensions. This was easily rectified by taking a small notch out. The other problem was that the plate also prevented me from inserting the wind down tool into the housing. I did not want to drill a hole or take a notch out of the plate as it's pretty thick and an engineered type approved product. I also didn't want to start drilled additional holes through the chassis especially so close to the lower edge. My solution was to fix the winding mechanism with just a single M12 bolt rather than 2 bolts.
This allowed it to pivot down, be visible below the plate and therefore allow insertion of the bar. While not ideal, the bracket is taking only the weight of the mechanism itself, so very little and having tested it a few times, it also doesn't move at all when operating the winder so I'm comfortable it's secure enough and also added an additional nut. Got to get a wheel cover now.
