1st time trip to Spain but no ferries?? How to get there.

Given the time frame you could probably get a flight from Bristol and a hotel near Alicante for two weeks for the cost of diesel to get there in a van, possibly all inclusive….🤔
You can do 3 weeks for less hence I don't take the van .I can get flights accomodation and a hire car whilst I'm there .

I would always go via Calais and drive through France. It's an interesting journey, if you have time you can explore on the way. If you don't use tolls it's definitely cheaper than going direct to Spain, even with tills it's probably a bit cheaper.
 
A bit academic now you appear to have decided to fly but, should you decide on a winter trip in future, a western route through France to Spain will avoid significant snow problems that can be encountered going 'down the middle'.
