Can anybody tell me why all the editing tools are greyed out when I write a new or edited post?
I have always beep able to use them previously, but the last month or so, grey’d out.

Its because you are in preview mode. Click the one button that isn't greyed out on the right

Close but no cigar

The [ ] symbol being orange means you had BBCode mode enabled.
Post Preview mode is the far right icon that looks like a page with a magnifying glass on top.
That goes orange if enabled and writing more text is locked.
E.g. this post is in preview mode:
