It would probably help if you said where you're starting from and how long you want to drive for ?
Southern Spain would be my choice but you may not want to drive that far or have the required time

Fair point well made, Lincoln area but I drive 60k a year so anywhere is possible

Anywhere along the southern Portuguese or Spanish coast will be a pleasant temperature probably warmer and dryer the further East you go, we usually hover around Tarifa as we like birding and there are some great places between there and Huelva for that
