Aires will all be open but the water may be turned off for frost protection.
Also most campingcarparks will be open.

Search for sites will have an option to select open all year sites, many in France and a lot of Spain do close from October onwards and start re-opening for Easter. Consider using aires for stopovers and be aware of the water situation..

Done the trip many times in Jan / Feb. If Spain is your destination then drive while it's light and get parked up at an Aire for your night stop, middle of France can be very wet and cold / snow, just plod on.

If you’re on your way to Spain then presumably you’re only looking for overnight stops, in which case Aires should suffice.

Get the acsi book or app. Although still not many open all year in France there are a couple on each of the popular routes down

As others have said hardly any sites will be open in France and Northern Spain (expect on the Med).

The good news is that there will be plenty of "Aires de camping cars" open all the way down France and you can stay the night there. Many are free, but if not the charges will probably be a lot cheaper that a campsite. Many in interesting villages, town and cities. Further North they will probably have switched off the fresh water but you can usually dump your grey and black waste. We just drive with water tank full. Spain is also catching up with France with providing "camperstops" to attract tourists.

We mainly use the paid for CamperContact app on our phone to find them and also the search for sites app.

The two sites I've posted links to are low amperage at 6 amps which is better than nowt .
At least your leisure battery will stay charged and your fridge and low wattage kettle will both work plus the facilities block is heated in the winter months
Just remember a lot of these sites will only be a 5 amp hook up.

Thanks to all. I may just peddle straight to Spain as quick as possible 🤔

No need to worry unduly. As long as you have your own sanitation on board, as Chaser said https://www.campingcarpark.com/en_GB/search/areas/map will see you right for your journey through France. All of them stay open all year round for motorhomes and will usually supply 6 amp hook up, somewhere to empty your waste tank and loo cassette as well as water if it hasn't been turned off because of low temperatures. You won't need to worry about booking in February but you will need to buy the Pass Etape entry card either in advance (details on the website) or you can usually get one from the entry machine at your first stop.
If you click on the symbol on the map you can bring up full details of the aire including "nature of the sites' soils" which will allow you avoid the grassy ones if the weather is bad.
