What to see on Algarve?

We've got 4 days to kill, driving from Sevilla to Portimao in October.

I'm sure there's a wealth of experience in here, so chuck me some info

Cape St. Vincent, the most southwestern point of mainland Europe. Was the site of Henry the Navigator’s navigation school and an abbey, but all destroyed in 18th century. I found it a most spiritual and magical place.
The town of Lagos is very pleasant, particularly if you like the scent of grilling sardines!

Good surfing and kayaking along that coast. Sea caves, rock formations.
Castles inland. Drive to to top of Monticute [ Spelling. 1 km high.
Drive back down and take in the the Alentajo coast and scenery.
