What fuse rating for inverter?

Don’t touch those things you linked. And, remember you are not fusing the inverter, but the cable connected to it. To feed a 1500w, (forget the 3k it’s only for a fraction of a second), you need at least 50mm2 with a 200-250a fuse. Never increase the fuse beyond cable capability. Get a mega holder and fuse, then you’re done and safe.

I thought they looked a bit cheap but what about a circuit breaker as an alternative to a fuse if I was to source a decent quality one. Is there a reason why a fuse might be better?
 
A certifies and tested fuse is supper safe, cheap and easy to find. It’s not the same with DC breakers. A good DC breaker to be safe HAS to be tested AND certified; and it costs 10x more.
Outback, and midnite solar do DC breakers. They are certified, tested and safe. A 125a DC breaker costs about 80-90 quid. The higher rating are exponentialy dearer.
Bimble Solar imports them from the states, and they are UL listed. So if it’s passed and it’s safe for the US regs, I’m happy to use it.
A DC breaker that can not brake 5-10ka it’s garbage and a fire hazard.
Your choice, I only try to help you to chose well.
 
What rating is the cable? The fuse must be less otherwise the cable will burn before the fuse blow’s

Slight digression. Is it a good idea to put an isolator switch onto the d/c supply To cut down power consumption while idle?

If everything is switched off there shouldn't be any power consumption. We can switch all power off from our power control panel. A few things remain live - a few interior lights and the fridge( I think) but if those are off there is no power consumption. I guess different vans may vary.
