Anyone know what this button under sink does?

As its near the sink is it for the water pump? Does it light up when turned on, can you drain the grey water ok and fill with fresh. Some vans have the facility to pump fresh water from a container in, some vans have a powered drain valve for the grey water?

Turned 12v on and pressed button beneath sink, heard something start (pump?), now getting water out of taps, but water from hot tap is not hot.

Have you got a water boiler? A few photos of the working parts of your van would help us to help you!

I would think that the microswitch in the tap has failed, so somebody just fitted a switch.

A common method for a motorhome water system is the to have an electrical switch (microswitch) inside each tap. When the tap is turned on, the microswitch switches on and that turns the water pump on, so that water flows from the tank to the taps. You can usually hear a very faint click of the microswitch as you start to turn on the tap.

As you can imagine these microswitches can fail. A way to bodge a workaround is to wire a standard switch in the circuit where the microswitch should be. Then if you want water, turn on the tap and turn on the switch to trigger the pump.

It's easy to test if this is what the switch is. Turn on the tap, no water should flow. Turn on the switch, water flows. Turn off the switch, water stops.

The hot water is a completely separate issue. It depends on what brand of water heater you have. Can you tell us make and model, or maybe post some pictures of the heater and/or its controls?
