Can anyone reccommed a place to stop within an hour of Calais to eat and stay over

Depends on the direction you are heading when you leave the port or Eurotunnel......?

Gravelines and eat at L'Eclusier right next door.
Beat me to it ;) restaurant not open every night , best to book but baker Street in town is open every night and do some good meals at a reasonable cost.
Other restaurants and bars available.

Aire sur-la-Lys
not too far from A26 and Calais
or, a little further away from the A26 but could incorporate into route easily if travelling north is Saint Venant.

Bully le mines is a good option, free and free EHU.

A good rule of thumb for steaks in France is to ask for "bien cuit" otherwise they just wave it at the cooker as they walk past.
I think my “medium done please” got lost in translation 😂😂
I also had a burger in France that looked a bit lively 😳😳

Another vote for Aire-sur-la-Lys for a change from Gravelines. An old municipal site with all the services which are very smart. Nice little town a short walk from the Aire. Lidl and Intermarche on the outskirts.
