My Boxer 2014 has only 5 of the 6 oil level *'s lit yet the dipstick shows just over the high mark. Is this normal?

Chaser, do you mean four if the display "stars"? If so, why are there so many?

Presume the top two are to tell you it's too full

Not your engine I know but just an example

Which is more dangerous too much or too little oil. In my experience there's not much between the 2. Don't rely on dash display use the dipstick, a little below is fine. If at an't time the level rises get it checked out, sooner rather than later.

Oil level lights...... Lazy man's dip stick.

Orange oil light.... Tells you your sump bung has fallen out.

Dip stick..... Gives you an accurate indication of oil level... Use it.

Yes one light below maximum on the dashboard is about normal. Both the lights on the dashboard and the dipstick just indicates the amount of oil in the sump depending on how level your engine is at the time. It’s not often that you will read about motorhome engines suffering from a lack of oil when driving through deep inclines such as mountains because most engines get their oil from low in the sump. Unless you find your oil level is increasing then you could have a problem with fuel getting into the oil sump due to injector problems etc. Just carry on as normal I’m confident your engine has a a clean bill of health having been a diesel engine engineer for many years.
