Mini computer in the van

Thoughts.
I'm considering adding a mini computer to the van, 12v , I'm also thinking about adding a camera to the minicomputer, plus adding a firestick to the minicomputer so that we can watch TV.'
Internet provided by a MIFI.

I was thinking about adding an external hard drive to the minicomputer with music and video

I was hoping to be able to monitor the internal of the van remotely, and the only way I can ti of was via a minicomputer..

Possible or is there a better way or am I being OTT?

I used to use a couple of these at home for media. They also have an optical drive.
Going cheap if you want one

Plenty of IP cameras they have a Web server built in so all you need is an Internet connection via your Mifi.

The firestick doesn't need a computer. It would drive the monitor/TV directly.
