Whether you need a mifi compared to just tethering from a phone can depend on where you will be camping - distance from and quality of mobile providers mast signal - and also you vehicle - can the signal get in and out.
Some vans, especially Panel Van Conversions, PVC, suffer a Faraday cage effect so the mobile signals don't get in /out. In poor reception areas the rooftop aerial becomes necessary to overcome.
Starlink is mutts nuts but very costly, only really justified in my view if you have essential use you cannot live without.
So if you need mifi issues become choice of aerial and choice of router. Aerial has scope for mistakes as to whether to go for gain in low (existing rural) or higher (newer 4/5g suburban) areas. Choose from Panorama or Poynting.
Router is better with decent cat 16/ cat 20+ lte options for 4 or 5g service. Check if router uses internal aerial or external connections. Some preferred like MU5001 only use internal on 4g which is problem in Faraday cage .
Do consider power supply. Not all run off 12V, but inverter adds electric use overhead if off grid .
As for tv any Avtex, Cello and other 12V will be good. You may prefer a Firestick in USB HDMI rather than Smart TV
