When we bought this Motorhome back in 2016, the cassette had baked in contents.

So, I bought a Fresh up kit.

Seal started to leak shortly afterwards. So bought another seal and now another and it still leaks.

Am I doing something wrong ?

Also, the toilet smells in the cab and cab area when driving in hot weather, even when recently emptied

I resealed mine. I still get minor seepage through the trapdoor when there cassette is full and on its end when I'm dragging it to the chemi dump point.

The smell might not be the cassette. It's very likely it's the grey tank.

Avoid any chemicals containing any sort of bleach. I used to be a service engineer and bleach is a big no-no. If it pongs and the ring seal is good I'd check the burp sealing washer underneath the vent unit for bleach wrinkles.

I had a similar issue and tried a different cassette etc and ended up swapping the actual inner toilet bowl as the face that the seal touches was warn/damaged only very slightly but enough to give me grief !!

The smell will likely be the grey tank.

Always run some water down the sink etc before driving off with dried up U bends in hot weather.

Suspect from OP message that he does know difference between a toilet and grey water tank!

I usually leave some water in the bowl - tests the seal. As has been said smells are often from the grey water - fit the plugs in sink, shower and floor (y)

What do you lubricate your seal with?
Silicone spray or olive oil both work well.
We can put water in our bowl and it will still be there days later no leaks.

Had the same thing.
I used a very fine wet and dry sandpaper wrapped around a flat block. (sandpaper should be wet)
Didn't take much to "clean up" the mating surface.
I liberal application of silicon grease to both the new cassette flange and toilet mating face... no leaks.

I use Silicon grease on the main seal and all moving parts. No leaks or smells that I know of, although I think the main seal may be wearing as some of the residual water in the bowl sometimes seems to have run away into the cassette.
