Since 1996, had Elddis/Swift/Rapido/Rimor/Chausson MHs. Autocruise/Globecar PVCs/Compactline i-138
In our MH we have front seats that have the circular type adjuster knobs on each side where the base of the back joins the seat which are used to alter the rake and also to be able to fold them for when we lower the front drop down bed.

Trouble is that they are stiff and not that easy to grip especially with my arthritic hands, consequently I want to do something about them. I've considered changing the knobs for some sort of lever, or fixing a lever to the knobs themselves, but haven't come across anything suitable, another alternative is to see if they can be motorised but this would be more complicated and difficult although with his love of motorising stuff I'm sure Lenny HB could come up with something!

I don't know how the existing knobs come off which I need to do to see what's feasible - has anyone taken their knobs off and if so how?

Depends on the made of seat but usually they are a friction fit on a spline.
You might be able to remove the handle and use a ratchet so you have more leverage, something like this even has a swivel head so you don’t have to fiddle with a reverse ratchet lever
