Hi I’m new to this, just bought our first Motorhome. Do we have to be connected to EHU for the sockets to work

Yes - unless you have a large battery bank and some clever electronics that can use your leisure batteries and auto switch off when battery is low or you plug into EHU - just to give you the option.

You can wire a couple of sockets directly to an inverter for specific uses.
I use mine for the 230v TV and sound bar

If you are talking about the 3 pin 240v sockets, then yes, you will need to be on EHU for them to work solely without any other form of incoming or stored energy source.
If you are talking about 12v sockets, similar to a cigarette lighter fitting, then these will work directly from either your leisure battery or main engine battery, depending which they are wired to. These sockets however are running from a finate energy source (ie your batteries), so they will obviously need to be recharged at some point.
One way to do this is by plugging into the EHU and letting your on-board charger recharge your Leisure battery, and if you have the facility fitted, may also charge up your engine battery.
Alternative charging methods for the 12v side of things are the use of solar panels or to take the van for a long run!
Then there are things called Inverters which can convert stored 12v energy in your batteries ( often again obtained from solar panels) to 240v, allowing you to use your appliances through the 240v sockets.
Hope this simplistic explanation helps.
Power supply, 12v,240v, solar is a very emotive subject and one constantly discussed on here.
