Conversion 12v to 240v

The maths is fairly simple - to do in your head with a few approximations

1000 watt kettle at 250 volts is 1000 / 250 = 4 amps.

Changing it to 12 volt, multiply by 20 gives 80 amps. (maths is 240 / 12 is 20)
This is the bit that needs most thinking about - but the maths is easy, mutiply by 20 to change from 12 volt to 240 volts

So, your inverter will draw 80 amps - no need to worry anout the watts.

Say the kettle takes 6 minutes to boil - one tenth of an hour

80amps for 1/10th of an hour is 8 Ah

So with 2 x 80 Ah LiFePO4 batteries - total 160 Ah, you could boil the kettle 20 times. (maths 160 / 8 = 20)
Two batteries because 80 amps out of one battery is probably too much.

Does make orsize of inverter have any effect on these figures .
I have a renogy 2kw pure sine

Basically, No effect.
So long as the inverter is powerful enough to run a kettle. Yours will be fine.

Although some inverters are more efficient than others. A few percentage points.

You will still get your 20 pots of tea from 160 Ah of LiFePo4. Certainly 19. Maybe, 21.

It has just occured to me, what you may have been thinking about here.

Although I believe my calculations to be correct. you also need to take into account the power needed to run the inverter, wether it is boiling a kettle or just sitting idle on no load.

That figure will vary depending on the make and model of the inverter. In the case of your Renogy 2kW Pure Sine inverter, the static current just to keep the inverter switched on is 1.3 amps. This does not sound a lot, but adds up over time to 1.3 x 24 which is 31 Ah per day.

This means that if your inverter is left switched on all the time, for say, two days, you will only be able too boil the kettle 12 times, not 20.
160 Ah batteries provide 2 x 31 Ah for inverter and 12 x 8 Ah for kettle.

The main thing that will make a difference would be how much water is in the kettle! So if you always fill it right to the max, or just put the amount you need at least to the min fill level. The power is being used to heat the water, so the less water the less power used.

The kettle will still draw around 86amps+ (As per @Capmart but adding in efficiency loss, and using 12.8v nominal voltage for Lithium) if the batts are Lithium and all the wiring is good/correctly sized.

Some power is used by the inverter, which is indicated by its efficiency rating which for yours the maximum efficiency is 90%, given the kettle is 1000w the efficiency at this load will be a little less.

Hence why many use a gas kettle when off grid 👍🏼

And some would also like to return to horse drawn carriages .... 😁😁😁😁😁😁

Just joking, but we haven't used gas to boil a kettle for over two years and would be very disappointed if we ever had to .... though I have to confess although we have removed the hob kettle, we still have pans which could be utilised if ever needed.
The 'trick' for us is to ensure the battery is always topped up so we adopt our use of the motorhome to ensure that happens.

If I could get someone to replace our worktop with one that looked original, we would have the gas hob removed and either an induction hob installed instead, or just use our portable one on the worktop.

When involved in boats the company used to make their own Corian surfaces for the shower areas and galley - There will be local suppliers of Corian or the copies that would be able to do it for you I'm sure

I have a pair of 500W portable induction single-plate hobs. Always use one to boil the kettle for water and that kind of stuff and just put it on top of the glass lid that sits over the gas hob. I would like to get rid of my gas oven and gas grill (use a Microwave/Grill and Air Fryer) but I WOULD prefer to keep a gas hob - but as it is a fully-fledged cooker , can't get rid of just one or two things :( (And the cooker would be a right bugger to physically get out of the van as well! it would have to dismantled to fit through the door so it remains as built-in storage).

We use a pan to boil water for drinks. Sounds a bit old fashioned but it"s easier to clean, dry and put away, you can see exactly how much water is in it and using gas warms the van up lovely in the morning. Waste heat is wonderful in the UK 😎

A whistling kettle is part of my brain knowing it's on 'holiday'.

I do the same, a pan with a small pouring lip/spout type edge (milk pan?), don't need to carry a hob kettle then and the sauce pan is dual use.

After asking a similar question. I now know how to work out voltage. Have learned so much on these forums. Also have a pot to boil water for coffee, and have made a soft boiled egg in it at the same time ! We like all that campy type stuff .
