Can anyone point me to a check list of documents and other safety things that you have to carry to travel in EU please? Thanks.

Don't forget if you go beyond the Schenghen Zone (but still in EU. eg Bulgaria, Romania + others), you will need original V5 document, we got caught out last year as we had only a copy. I believe, technically, you also need original V5 for all EU countries but less likely to be checked (unless in accident for example).
