I am about to collect a 2nd hand MH and am suspicious that the documentation doesn't include a CoC. All previous since 2009 have included this.

Should I be worried?

If it's a standard mass produced model then no need to worry, the manufacturer can provide a copy , often foc. If it's a one off DIY conversion then there may be some IVA requirements

The only time i have ever needed a COC is registration of a vehicle in another country, unless there is another reason for having one that i don't know about, the UK obviously didn't adhere to the EU regulations becouse none of the Japanese grey imports conform and is very difficult if not impossible to register them in europe.

A 2009 vehicle should have one, could cause problem if you need to get an Austrian Go box.
I would ask the seller to get one or get a price reduction of £200 as that's what some manufacturers charge for them.

Sorry to be ignorant, but what is an Austrian Go Box? And why would you need a Coc?

It is a 2021 model. I was referring to 2009 as before that I never did get a CoC.

Need a Go box to use the Autobhans in Austria if over 3500kg.
If you don't have a C of C they charge you the highest rate based on emissions. Sometimes they even fine you for not presenting your C of C.

I hope not if the vehicle pre-dates the CC system.
