Cadac......heat control?

So with the past few days of nice evenings we broke out our new to us Cadac Citi chief.
Excelent bit of kit but....and its a big but......even on the lowest setting the heat under the dome exceeds 180C so no real option to 'slow' cock something.......is this how they all are?

Don't put the lid on, keep food to the sides of the pan or whatever.

Hi
I’ve always used a cadac for bbq with mine I just turn down the flame/heat and that’s enough, I did replace the plastic part inside once because it kept going black underneath the plate once I replaced it was fine.
