Three works in Ireland, as well as many other European countries
We bought a 12gb data sim for £70 which lasts for 12 months. Got it from the three store online

As an aside to this, if you want a cheap phone sim go to a Tesco store once you get there and get one of theirs - very cheap to use!

We used a Tesco data sim, no problem buying it in the stores there,
€ 2.50 for the sim and €15 for 7.5 gb last 30 days but you can top up before if you run out.
We put it in our unlocked mifi and it worked very well. 
Ours lasted a month.
