I fitted my new Victron 50amp dc to dc charger, just prior to this holiday, I've set both the input and output currents to 40.0A.
It seems to be working ok, but I'm no expert and just wanted to check it's performing as it should be.

My Lithium battery was at 74% prior to seting off, ive just driven for about 1hr 15mins, (the fridge was on 12v during this drive time), just checked and battery is now at 96%, does this seem to be about right?

So your 230AH battery was at 74% meaning 170 amps.
In an hour and a quarter your 40 amp B2B will have put about 50 amps in taking the amps to 220 amps.
96%SOC is 220.08 amps.
Seems like your B2B is working fine (y)
