After this has passed and we can travel further afield what are the penalties for staying longer than the stipulated 90 days
Would it be a case of being captured at the channel crossings?

5 year ban on the passport for re entering, plus a financial penalty, and that was just for a chap who didnt want to travel back from Italy because he had covid nearing his 90 days.

might be that by the time covid is got rid of most will be too old to travel .
might be it will be around for years.

Why would you want to run the risk of overstaying and being banned from return in the future? The EU has a Days Stay Calculator that is derived from the actual system that will be used to log 3rd country visitors in and out.

Once the pandemic is a side story, the consequences of over-staying will only become increasing apparent as people do it. Expect lengthy bans at least.
