I think your camping journey very much mirrors ours! We had a similar frame tent and also a VW Autosleeper van conversion before our current 2015 IH 63 RL. Same interior as yours. Probably converted same time as yours, but we bought from end of season stock sale at Southdowns in October 2015, having, a few days before, put in an order with Nick Whale. However, we had specified the cab seats that they had on a showroom model and NW came back and said they will be the new small cab seats on your order but we will look around to see of your spec available elsewhere. They sent a couple of details one of which was the Southdowns one (at full book price) and we were lucky to go direct to Southdowns and get theirs at a reduction of £10k
