We are looking to add additional USB ports to our Hymer.

I have found a run of cables with 3 core being 240v and blue and brown twin flexi, which I assume is the 12v. This run of cables is situated in the best place to access a supply from.

My question is, what’s the difference between twin black/red which is wired into the existing USB ports, but cannot be seen in the trunking/conduit and the twin blue/brown which is visible.

If you are going to use an existing cable you need to find the other end of it.

The best place for connecting the cable is in the Elektroblock there is normally a few spare pins you can use and you can either have it switched by the control panel or permanently live. Have a look at the Elektroblock manual it will show you the pinouts. The pins you need are from the "mate 'n lock" range easily crimped with crimpers for non-insulated terminals (blade push-on etc).
 
Black/Red is the OEM wiring Neg/Pos and the Brown/Blue are the German colours - Brown = Pos / Blue = Neg...... You will find a mix throughout the van, depends on the builder I assume.

I added USBs above the bed in the MH, I tapped into the light circuit which was Blue/Brown, and when I changed the cab lighter socket to USB, the OEM wiring was Red/Black ......

The theory is, if you are mixing 240V and 12V cables in an installation, the 12V wires need to be insulated to the same level as the 240V ones. Hymer and some other manufacturers do this, but a lot of others including the Brits don't. In my Hymer, the white sheathed wires are 240V 3-core, the black sheathed ones are 12V 2-core.
