We're on Irish Ferries route Pembroke-Rosslare tomorrow. Is there a chance of sighting whales, dolphins, anything else interesting on this crossing?

You'd be very lucky. I've lived in Pembrokeshire for 25 plus years and sighted dolphins / porpoises maybe a dozen times, including in some of the more likely spots such as the tidal races through Ramsey Sound.

Pembroke route is not too good For Cetacean spotting. There is a population of Harbour Porpoises in the Fishguard area. They are small. So you have to know what you are looking for.
Cardigan Bay has a big population of Bottlenose Dolphins but they rarely stray far enough South to be see from the ferry. The most likely wild life to be seen on the Pembroke route is an amiable Irish drunk.
