Chop onions thin boil first for 3 mins. Out of pan sit for 5 mins. Get frying pan put some olive oil in 2 tables spoons inch of flour half a jar of sweet maple syrup and stir till water effect 4 oz of brown sugar stir till caramelised add onion stir simmer for 15 min. Tell me wat u think shiftzz

Still using the windfall chutney made last year. Pear, Apple, damson, onion, a lot of ginger, a significant amount of garlic and muscovado sugar. Tastes wonderful with a really sharp proper cheddar.......

Edit - didn't use a recipe. Just chucked it all in and used twice as much ginger and garlic as thought suitable at the time

Second edit - reading below, vinegar was also in there as well. Forgot that bit

I made a chutney at x mas pear olives brown sugar. Peppers red and green 2 onions large maple syrup 2 spoon of good whiskey I was stunning. Let in sit in the fridge for 24 hours then got the pinky winkies( little sausages) marinaded them in the chutney for 3-4 hrs. Omg stunning.

Onion marmalade:
Very thinly sliced onions.
Cook very slowly on low heat with olive oil and tbsp water.
Add about 300 grams sugar
1/2 bottle balsamic vinegar
About 200ml red wine vinegar.
Heat, stir until sugar dissolved,
Higher heat for about 5 mins.
Cool slightly, put into sterilised jars.

Onion chutney
Onions, sliced
Any combination of apples, plums, figs--chopped
Raisins or sultanas.
Cook onions gently in olive oil and tbsp water.
When soft add fruit
Add about 200 grams sugar
Stir until sugar dissolved.
Add mixture of balsamic vinegar and red or white wine vinegar.
Cook until it looks jel-like .
Cool slightly and put in sterilised jars.

Balsamic vinegar gives richer flavour.
Combination of sugar and vinegars make the preservative.

Maple syrup - like that but it would never last long enough here to actually be used in a chutney unless locked away somewhere....
